Here are the rules :

 

Meat : Are authorized to be eaten : mammals with splited and divided feet and the ruminant animals.

So that the meat is considered as kosher, it is necessary that the animal is killed according to a quite particular method called the " ché' hita ". It also prohibited to consume the blood of the mammals and the birds ;

 

The kosherisationd is made in three stages

All the pieces of the animal are not consumable, we cannot eat the sciatic nerve. All parts of the animal which is traversed by the sciatic nerve are impure to consumation  (the lower limb and the bottock).

 

Birds: Are prohibited : all the birds which insert their claws in their prey before eating them. Are authorized those which have a spur, a jabot, a stomach from which the lower face is detached easily, and those which do not crush their prey before killing her.

As for the mammals the birds must be cut down according to the ritual method.

 

Fish : Cannot be consumed : fish with scales and fins. All the shellfishs and seafoods are prohibited.

 

Eggs : Only are authorized eggs laid by kosher birds. Eggs which present a bloodstain are not consumable.
